4 Ways to Transform Your Turkey-day Leftovers

If you’re reading this, it means you’ve made it to the other side of the Thanksgiving Day gauntlet. Bellies have been filled, laughs have been had, and memories have been made. If you’re anything like me, the waning days of the Thanksgiving holiday leave me wanting something a little lighter, greener, and perhaps without gravy. 

And yet… 

We’ve all been there — we open the fridge with every intention of making some kind of green salad but the fridge light shines a beam on the stuffing and corn casserole and before we know it we’re nuking 3 cups of brown food to put on top of crispy sourdough all in the name of not letting it go to waste! 

But what if I told you it’s possible to transform those heavy leftovers into the leaner, greener lunch you’re craving?

Think: stuffing becoming the base for a delicious and satiating egg-white frittata; your leftover turkey meat combined with avocado and curry for an amazing turkey salad; heck, we can even get your sweet potato pie to somehow transform into sweet potato salmon cakes! It’s not witchcraft, but it is practically magic, and you’ll only believe it if you experience it for yourself!
